On 19th May 2023, FSANZ published administrative assessment report on cellulase from genetically modified aspergillus niger to be used as a processing aid in brewing of beer and in distilled alcohol production. The application seeking approval to amend the Australia New Zealand food standards code to approve a cellulase enzyme preparation was produced by Novozymes. The enzyme is used in brewing processes and distilled alcohol production, hydrolyzing (1,4)-beta-d-glucosidic linkages in cellulose, lichenin, and cereal beta-d-glucans. It reduces filtration time and haze problems and is used in beverage alcohol production to degrade gelatinized starch and dextrins into glucose and other fermentable sugars.
