European Union evaluates the safety of a food enzyme endonuclide of -1,3 (4) -beta-glucanase

The European Union Food Safety Authority published an opinion on the safety assessment of endo-1,3(4) -beta-glucanase (endo,3(4) -beta-glucanase) on February 22, 2023.

It is believed that the non-GM Cellulosimicrobium funkei strain AE-TN produces the food enzyme, which is used in baking and yeast preparation.

After evaluating the situation, the panel came to the conclusion that while the risk of anaphylaxis from dietary exposure could not be completely eliminated under the circumstances of intended use, the chance of it happening was low. However, the panel came to the conclusion that the food enzyme cannot be regarded as secure because living cells produced the strain in it.
