Health Canada Notice of modification to the List of Permitted Food Enzymes to enable the use of alpha-Amylase from Bacillus subtilis AR-651 in bread, flour, whole wheat flour and unstandardized bakery products

Bread, flour, whole wheat flour, and unstandardized bakery items have all passed the premarket safety evaluation conducted by Health Canada's Food Directorate in order to gain approval for the use of alpha-amylase (-amylase) from Bacillus subtilis AR-651 as a food additive. This food enzyme has a Good Manufacturing Practice maximum recommended use level.

The premarket evaluation confirmed that B. subtilis AR-651 -amylase is safe for the intended applications. Therefore, Health Canada has modified the List of Permitted Food Enzymes as of April 27, 2023 to permit the use of -amylase from this source as described in the information document below.

This paper is to notify the public of the Department's decision in this matter and to direct any interested parties in submitting questions or further scientific data regarding the safety of this food additive to the appropriate offices.
