Extensive literature search on organic arsenic in food

The European Food Safety Authority (EFSA) published extensive literature search (ELS) after collecting and identifying studies published since 2009 and relevant to the topic organic arsenic in combination with the substance group characterisation, occurrence in food and toxicity. Information regarding the following topics was gathered and documented- 1) analytical techniques/methods for quantification of organic species in food and drinking water, 2) human biomonitoring data (blood, serum, urine), 3) occurrence/concentrations and formation of organic arsenic species in food and drinking water, 4) human exposure to organic arsenic species via food and drinking water, 5) toxicokinetics (absorption, distribution, metabolism, excretion) in humans and from in vivo and in vitro studies, 6) toxicity in vivo and in vitro, 7) observations in humans (including epidemiological studies, case reports, biomarkers of exposure/effect), 8) the toxic mode/mechanism of action (in vitro, in vivo, humans).
